Sushi Sakai

Sushi Sakai is a counter sushi restaurant in Nishinakasu, Fukuoka, serving seasonal fish sushi and tsumami. The omakase runs through tsumami, nigiri, maki and gyoku, with tuna, uni, and pairing options of nihonshu and wine. The chef prepares ingredients at the counter and forms each piece one at a time, setting the shari with red vinegar at a controlled temperature. Reservations are difficult to secure.
