Sushi Kubota

It serves a lunch omakase and sushi including tuna, sweet shrimp, and sea urchin, using fish flown in from Japan and seasonal ingredients. The chef describes the fish as he serves it, and the meal includes chawanmushi and green tea. The shari is on the mild side with little vinegar flavor, and the rice grains can be firm.
