Hia Chai Shanghai Noodle

Hia Chai Eomuk Guksu Jip is a fish cake noodle shop in a small alley between buildings in Si Lom, Bang Rak, Bangkok. The noodles are blanched briefly for a chewy texture and served in a clear broth topped with steamed fish cake, fried fish cake, and meatball-like toppings. Cilantro is left out if you ask for it to be removed. The alley location means it stays hot even with fans running.
